Having worked his way through a number of prestigious, Michelin-starred institutions (Taillevent, La Vieille Fontaine, Jamin, Le Grand Véfour and La Truffière), Christophe Poard found himself as chef here at Le Park 45, providing guests with a new menu each month. His cuisine can be described as contemporary yet authentic, delicate yet generous. It reflects the attentive work and precision of a passionate chef with a drive to capture the flavours of each region. He also enjoys cooking with daring, masterfully controlled combinations, such as beef and iodised notes, or poultry and coffee, in order to create a subliminal taste, all magnified by spices.
The chef pâtissier at Le Park 45, Pascal Picasse is a true artist in his craft and passionate about the creation of deserts. Now 40 years old, he never hesitates to re-examine his practices and set himself new challenges. Always striving for brilliant flavours and aesthetics, seasonal organic and local produce lies at the heart of his creations. With his experience in such Michelin-starred restaurants as “La Côte Saint Jacques” (3*), the “Pic” (2*) and “La Pyramide” (2*), and as a disciple of the legendary Auguste Escoffier, chef Pascal Picasse presents his talents in the kitchens of Le Park 45 (1*), working in tandem with the chef Christophe Poard as one of the top teams of the Côte d’Azur.
