Sébastien Broda, a talented chef who has already worked in a number of the finest properties in the region, has just taken command of the kitchen at the Grand Hotel in Cannes, and more particularly of the “Le Park 45” restaurant.
At the age of 30, Sébastien Broda had already added to his list of achievements a Michelin star at the “Jarrier” in Biot, where he worked as owner chef. Prior to that, he had spent 3 years with Alain Parodi at “Lou Cigalon” in Valbonne: “Alain taught me to be generous and to cook with my heart”.
Of the other stages in his professional career, La Palme d’Or (with Christian Willer), La Belle Otero (with Francis Chauveau), L’Amandier (with Roger Vergé), he is wont to say that “he learnt rigour in his work and how to select good produce”. He has never left his Region, because it is, in his words, “one of the richest in terms of top-quality vegetables and fish”. His cuisine remains faithful to Mediterranean tradition and yet is open to some more contemporary influences. His dishes combine complex flavours, yet flavours that always marry well and remain under the masterful control of the chef.
His à la carte menu is not fixed but changes, as do his set menus, every three weeks, and occasionally, when there is something at the market, a new dish may replace another on the menu.
Sébastien Broda, in building his team, has brought in two equally passionate young chefs, his second, Silver Simonet, formerly with Ducasse at Le Louis XV and Pascal Picasse, his former pastry chef (and associate) at the “Jarrier”.
It goes without saying that this new team has what it takes to win over the increasingly demanding clientele on the Croisette and give the Grand Hotel de Cannes a restaurant on a par with the hotel’s other amenities.
